What is Alfalfa?
Alfalfa (Medicago sativa) is a deep-rooted perennial legume, grown as livestock forage on nearly every continent and sold to humans as a "green food" capsule, powder, tea, and sprout. Its taproot can reach past twenty feet, the botanical basis for the mineral-density claim on most labels. It also produces L-canavanine, a non-protein amino acid making up roughly 1.5 percent of the dry weight of alfalfa seed and of the sprouts grown from it, and that compound is why alfalfa has a safety file unlike any other green on the shelf.
Almost every alfalfa capsule contains dried mature leaf. That distinction matters more here than for any other ingredient in this newsletter, because canavanine is concentrated in seed and seedling and declines as the plant matures.

A 500 to 1,000 mg serving of dried leaf delivers single-digit percentages of the daily value for calcium, magnesium, or iron. The one nutrient it delivers in a clinically relevant amount is vitamin K1, which is why anyone on warfarin must treat this as a drug interaction, not a vegetable.
Alfalfa is a forage legume with a real medicinal chemistry, and most of what makes that chemistry interesting is also what makes it worth being careful with.
What the Label Won't Tell You
Alfalfa is marketed as one of the gentlest greens available, and it is the one green supplement with a documented ability to trigger autoimmune disease. L-canavanine is a structural analogue of arginine. Cells mistake it for arginine and incorporate it into proteins, producing defective products the immune system can read as foreign. In work published in Science in 1982, cynomolgus monkeys (Macaca fascicularis) fed alfalfa sprouts and seeds developed a lupus-like syndrome with hemolytic anemia, immunologic abnormalities, and immunoglobulin deposits in kidney and skin. The syndrome went into remission when alfalfa was withdrawn and was reactivated by feeding L-canavanine sulfate alone. A 1983 report in the New England Journal of Medicine described alfalfa tablets reactivating quiescent systemic lupus erythematosus in two patients. Major lupus centers now tell patients to avoid alfalfa outright. The bottle usually mentions chlorophyll.

Another systemic autoimmune condition such as rheumatoid arthritis, Sjogren's, or multiple sclerosis
A first-degree relative with lupus, given the familial risk pattern
Warfarin or another vitamin K antagonist, without prescriber coordination
Organ transplant recipients and anyone on immunosuppressive therapy
Pregnancy and breastfeeding, given the phytoestrogen content and reports of uterine stimulation
Hormone-sensitive conditions including estrogen receptor positive breast cancer, endometrial cancer, endometriosis, and uterine fibroids

Critical Safety Point
The autoimmune signal is real, dose and plant-part dependent, and not a theoretical worry invented by cautious pharmacists. In a 1981 case, a man taking up to 160 grams of ground alfalfa seed daily developed reversible pancytopenia with an enlarged spleen. The monkey work used sprouts and seed, where canavanine sits near 1.5 percent of dry weight. Mature leaf carries considerably less, a genuine difference in exposure rather than a loophole. But the human case reports involved commercially sold alfalfa tablets, and nobody knows the threshold dose in a susceptible person. If you have or are at risk for autoimmune disease, the correct amount is zero.

The defining consideration. Seed and sprout carry canavanine near 1.5 percent of dry weight; mature leaf carries far less, and levels fall as the plant ages. Capsules are usually leaf. Seed products are associated with the worst reported outcomes.
Raw Sprouts Are a Distinct Food Safety Problem
The warm, humid conditions sprouting requires are ideal for bacterial growth, and contamination often starts inside the seed, where rinsing cannot reach. Alfalfa sprouts have driven repeated multistate outbreaks, including a Salmonella Typhimurium outbreak that sickened 63 people across 10 states in late 2022 and early 2023. Federal guidance is that children, older adults, pregnant people, and anyone immunocompromised should not eat raw sprouts.
The Taproot Claim
Alfalfa really does root deeper than most forage crops and really does reach minerals other plants cannot. The claim is botanically sound and nutritionally oversold, because a 500 mg capsule delivers very little of any mineral regardless of how deep the root went.
